FermentationSpontaneous fermentation beer, fermented in oak barrels with morello cherries from Schaarbeek. The brewery has planned a project to plant Schaarbeek cherries around its site. Every year, during the month of July, Oud Beersel harvests the Schaarbeek cherries in its existing orchard. Then the cherries with their pit and skin are added to the sweet Lambic that has ripened in wooden barrels. The sugars in the cherries activate the yeast present in the Lambic, which causes the cherries to ferment with the Lambic for a few months. The pits of the cherries gradually give the beer an almond-like taste. Unfiltered and unpasteurised, it is refermented in the bottle.

The Brewery: The brewery was founded in 1882 by Henri Vandervelden in Beersel, southwest of Brussels.

Origin: Lambic is a type of beer brewed in the Pajottenland region of Belgium southwest of Brussels. Brewed in Lembeek, the village that gave Lambic its name. It is fermented through exposure to wild yeasts and bacteria. Oude Gueuze’ label was accorded legal protection by the European Union. Brewers are now only allowed to call their product Oude Gueuze if the older lambic used in the process has been aged for three years, has matured in oak barrels and is free of any artificial sweeteners.
