Fermentation: The result of a collaboration between the venerable Trois Dames brewery in Sainte-Croix and Brewery L'Apaisée in Geneva. A blend of 5 different beers aged between 1 and 3 years in barrels. It undergoes a refermentation in the bottle.
The Brewery: Brewery L'Apaisée founded in 2015 in Geneva by Xavier Righetti. Making beer is also a way to return to a more manual and less stressful activity, away from computer screens. The name L'Apaisée (meaning "relaxed") had it all.
Origin: The Venerable Trois Dames Brewery is retiring this year in 2020. This beer will probably be its last collaboration and its last creation. A wonderful release!
Food: Excellent as an aperitif.
